When I first started I used to write them all down. The vast majority did pay, and most of those that didn't were tiny bonuses. And I did a few times message requesters when a significant bonus didn't show up. One of them even paid me a triple bonus. But several never responded. I never know how long to wait. I don't want to nag too soon, but if you wait too long they might have wrapped up the project, send out bonuses (except mine), and moved on. At that point they either don't care or don't have money in their requester account so just blow you off. Well, that's my theory. These days I only make a note of particularly large bonuses. The rest, they pay or they don't; I probably won't notice.
