Congrats! That's a tough one but in the end, I'd say you were unemployed at the moment. Just based on the common definition of employment being "the condition of having paid work". You could always mark employed and then leave a comment, though.
I honestly doubt in the grand scheme of academic studies that if you choose student, employee or unemployed it will make any significant difference but technically you are employed but haven't drawn a paycheck yet or started working so until you clock in I'd consider it unemployed since it's doubtful but anything could happen between now and March (like maybe you'll get a better offer or win the lotto and decide not to work).
I was having a bad day once. My blood alcohol level was dangerously low. I had taken one of those "fun and short" survey. I was probably 20 minutes in, then a surprise writing task. I wrote something along the lines of "I think your survey sucks." To their credit, they didn't reject my work.
