apple slicers can get lost, forgotten, accidentally thrown away, broken, stolen... and they cost money in the first place, which would have to be spent again when it needs to be replaced for whatever purpose (even if the cost is not much and the added weight in your pack is negligible). A good knife can last through generations and be sharpened over and over again. It's a more intelligent investment and the drawbacks can be easily mitigated by good planning.

You still have the issue of rubber particulate leeching into the apple's juices, with the rubber band trick. Not sure that's so wise. Anything can get lost or stolen, but that's one of the weirder things to lose/steal. Knives can be sharpened but you should consider the value of your time. You spend literally 3 or 4 seconds with an apple slicer, done. To cut with a knife, you need at least 4 cuts, 4 times the work, and there's risk of accidentally cutting your hand if the apple/knife slips. There are also people with arthritis that might not do well with knives, while you can just use your palms to press down an apple slicer. ...so both have their pros and cons.
