I was feeling that way when I first started turking, but trust me when I say it's fine if you dip your feet in slow and then go crazy on them. You'll acclimate quickly, (and there are instructions!), and then you'll speed up over time. Go get you some claims!

Real cheese will melt, just not like a nacho cheese sauce. When you can throw "cheese" into a fryer and it comes out in the exact same shape then it's creepy.

The thing with some cheeses, though, is that they melt slowly. I learned this yesterday as I googled for the perfect way to make grilled cheese sandwiches. They say you should grill the sandwiches on low heat, so that the cheese will be melted by the time the bread is toasted. Otherwise, your cheese isn't going to be as melted (unless you're using processed cheese.) If you just fry it, it's just going to get crispy before it melts and it'll hold its shape. (Thinking about this makes me want to throw a couple of stringed cheese sticks on the stove...) Edit: I think FE made me hungry. Normally I wouldn't talk about cheese on a forum. I don't like cheese that much. Ugh.
Put some real cheese in a pot with some evaporated milk and cook it a bit and you've got yourself some real delicious melty cheese.
