It was wonderful. My husband has been really sick but he was a little better by the time everyone got here. Everyone said it was the best Thanksgiving ever. The food was great and we laughed a lot! I don't have any leftovers. I sent them all home with the kids. Some went North and some went South Because Jim was so sick he couldn't help me at all and he's usually my sous chef and chief dish washer. I had to do it all for the whole week, which I didn't mind but it meant I didn't have time to make even one cookie. He had been sick for 3 weeks before everyone got here. But all in all it was wonderful!! I'm glad you had a nice day too. It really is my favorite holiday! Did I tell you how I fixed my turkey this year?

So, I spatchcocked it (I think I did it just cuz I love the word ) Here's what it looks like. I forgot to take a picture because I was so busy but mine looked just like this. I cooked 2 14 pound turkeys in 90 minutes. The best part was there was no dry meat. Everything cooked at the same time so the breast meat was moist. Wow that looks so comical! I've never seen a turkey cook that way! What an idea. I love stuffing so I would have to make my stuffing elsewhere if I did that. I haven't found a way to make stuffing that tastes and is soft like it came from inside the birds yet because I sure would like to have extra stuffing. Glad that worked out well!
