What's her name? There's one that I like who is kind of popular. Moo Snuckel. He does videos with the famous guys. But he's not a screamer, and I think he's in his 30s.

I don't think her subs/views/likes would be enough as a sole source of income, but maybe she's also on Twitch or has other revenue streams, or less need for income. It really comes down to how much you want to make. The more you want to make, the more you have to make compromises to appeal to a wider audience. It's also dependent on which platform you use. If you stream on Twitch, you're mostly being paid by the people watching you who make donations, so you could have a niche audience with some generous patrons and be okay. On Youtube, it's the platform that pays you based on your channel's metrics, so volume counts a lot more. There are definitely people who don't scream for 30 minutes straight each video or stream, but all the ones I can think of are either not using these activities as a sole source of income, or they got in on the ground floor with games like Minecraft when the streaming/Youtube thing got really popular and now have a built-in audience because of it. They are still not what I would call a 'thinking man's' type of content producer, they are just entertaining in non-screaming ways and still definitely appeal to the youngsters.
