They're very cautious about eat by dates. When you buy canned food at the supermarket for example, the eat by date is more likely to be the end of the food's taste life rather than its shelf life. The food doesn't taste good after a while even though its still safe to eat. I'll give non-perishables a try if its less that 3 years after the use by date. I've never gotten sick from old food.
